APPLESAUCE MUFFINS (OR 2 LAYER
CAKE)
 
In a large bowl or food processor place:

1 1/2 c. light brown sugar
3 c. flour
2 tsp. baking soda
1/2 tsp. fresh nutmeg
2 tsp. cinnamon
1 tsp. cloves

Mix lightly. Add all at once:

2 c. applesauce
4 egg whites
1 c. oil

Mix well. Fill tins 2/3 full. Bake at 325 degrees for 10 minutes. Do not overbake. To make more nutritious use:

Whole wheat pastry flour.

Unsweetened applesauce.

Sunflower oil.
