COFFEE CAKE MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1 egg, well beaten
1/2 c. milk

Preheat oven to 350 degrees. Grease and flour muffin tins. Sift together flour, sugar, baking powder, and salt into mixing bowl; cut in shortening until mixture resembles coarse crumbs. Mix egg and milk; add all at once to flour mixture; stir just until moistened. Make filling.

FILLING:

1/4 c. packed brown sugar
1/4 c. chopped nuts
1 tbsp. flour
1 tsp. cinnamon
1 tbsp. butter, melted

Combine brown sugar, nuts, flour, cinnamon, and butter. Blend until crumbly. Place half of batter in prepared tins. Sprinkle on nut mixture. Top with other half of batter and bake for 20 minutes. Yield: 1 dozen.
