COFFEE CAKE MUFFINS | |
1 1/2 c. sifted flour 1/2 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1/4 c. shortening 1 beaten egg 1/2 c. milk SPICY NUTS: 1/2 c. brown sugar 1/2 c. chopped walnuts 2 tbsp. flour 2 tsp. cinnamon 2 tbsp. melted butter Sift dry ingredients into bowl. Cut in shortening until mixture resembles coarse crumbs. Blend eggs and milk; add all at once to flour mixture. Stir until moistened. Alternate layers of batter and spicy nuts in greased muffin pans, filling pans 2/3 full. Bake at 375 degrees about 20 minutes. |
