COFFEE CAKE MUFFINS 
1 1/2 c. sifted flour
1/2 c. sugar
1/4 c. shortening
1/2 c. milk
2 tsp. baking powder
1/2 tsp. salt
1 beaten egg

Combine for spicy nuts: 1/2 c. chopped walnuts or pecans 2 tbsp. flour 2 tsp. cinnamon 2 tbsp. melted butter

Sift dry ingredients into bowl. Cut in shortening until mixture resembles coarse crumbs. Blend egg and milk, add all at once to flour mixture. Stir until just moistened. Alternate layers of batter and spicy nuts in greased muffin pans, filling 2/3 full. Bake at 375 degrees for 20 minutes. Makes 12.
