PAULA'S FAVORITE COFFEE PRALINE
MUFFINS
 
1 3/4 c. all purpose flour
1/3 c. light brown sugar
3 tsp. baking powder
1/4 tsp. salt
1/2 c. chopped pecans
1 egg
3/4 c. milk
2 tbsp. instant coffee
1 tsp. vanilla extract
1/2 c. melted butter
1 tbsp. sugar
2 tbsp. pecans

In a large bowl combine the flour, brown sugar, baking powder, salt and pecans. In a small bowl combine the egg, milk, instant coffee and vanilla. With a whisk beat the liquid until the instant coffee is dissolved. Mix the egg mixture and melted butter into the dry ingredients. Hand mix the batter just until the dry ingredients are moistened. Pour the batter into greased muffin tins and sprinkle the tops with sugar and pecans. Bake in a 375 degree oven for 18 to 20 minutes.
