BANANA COFFEE MUFFINS 
2 1/2 c. unsifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. instant coffee
1 tbsp. hot water
1 1/3 c. mashed bananas, ripe
1 c. butter
1 1/4 c. sugar
1 egg
1 c. semi-sweet morsels

Preheat oven to 400 degrees. Grease 2 1/2 inch cupcake pan. Stir together flour, baking powder, baking soda and salt in a small bowl (save). Dissolve the instant coffee in the hot water. Stir in mashed bananas (save). Beat together sugar and butter in large bowl until light and fluffy. Beat in eggs. Then you mix in your banana mixture. Stir in flour mixture until well blended. Fold in chocolate pieces. Divide evenly in cupcake pans. Bake at 400 degrees. Remove and cool on rack.
