BARLEY PILAF 
4 tbsp. unsalted butter
1 c. sliced fresh mushrooms
1 sm. onion, minced
1/2 c. chopped pecans
1 tsp. dried thyme
1/2 c. pearl barley
3 c. chicken stock
1/3 c. golden raisins
Ground black pepper to taste

In microwave safe casserole (2-quart), melt 3 tablespoons butter on high power for 2 minutes. Stir in mushrooms, onions, pecans and thyme. Cook on high power for 3 minutes. Stir in barley; cook 2 minutes on high.

Stir in stock, raisins and remaining 1 tablespoon butter. Cover and cook on high for 35 minutes. Let stand covered 5 minutes before serving. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
