BARLEY SALAD 
1 can chicken broth
1 c. water
1 c. barley
1 diced green pepper
1 thinly sliced carrot
1/4 c. diced onion
1 chopped tomato
1 bottle Italian dressing

In a saucepan, bring the broth and water to a boil. Add barley. After boiling resumes, reduce the heat to low, cover pan and simmer barley 40-45 minutes. Barley should be tender and no liquid left when done.

When barley is done, remove from heat, and add vegetables. Pour on half of bottled dressing (more or less as desired) and toss all ingredients well. Cover and refrigerate until chilled. Toss again before serving.
