JALAPENO CORN CASSEROLE 
1 c. uncooked rice (reg.)
1 med. onion (chopped)
1 med. red and green pepper (cut in med. pieces)
1 c. celery (chopped)
1/2 c. melted butter, I use less
1 tbsp. sugar
2 lg. jalapeno peppers (chopped)
2 cans corn - 1 whole, 1 cream
1 c. Cheddar cheese
Green pepper rings and cherry tomatoes, optional

1. Cook rice and rinse.

2. Saute onion, peppers, celery and add to rice.

3. Combine rice, vegetables and corn. Pour into baking dish and sprinkle with cheese.

4. Bake for 45 minutes at 350 degrees in 12x8 dish. Garnish.
