CANDIED YAMS 
4 med. sized sweet potatoes
1 tbsp. nutmeg
1 c. hot water
4 tbsp. butter
3/4 c. sugar

Peel and slice potatoes. Arrange in layers in a baking dish, sprinkling each layer with sugar and nutmeg and dotting over with butter.

Add the hot water, cover, and bake slowly until tender and candied. Uncover during last quarter of the time. Serves 4.
