CILANTRO TURKEY MEATLOAF 
Delicious! And relatively healthy!

1 lb. ground turkey
3/4 cup bread crumbs
3/4 cup finely chopped cilantro
3 or 4 finely chopped shallots (about 1 cup chopped)
2 stalks celery, finally chopped
3 eggs
2 tsp. seasoned salt (Lawry's)
1/4 tsp. pepper
1 tbsp. olive oil (for basting)

Preheat oven to 350°F.

Combine all ingredients in bowl - I recommend using hands to mash/blend.

Place in loaf pan. Lightly baste with a little olive oil.

Bake at 350°F for 45 to 55 minutes.
