FIREMAN'S STUFFED CHILIES 
2 cans Ortega whole chilies
1 (12 oz.) can evaporated milk
3 eggs
3/4 lb. Jack cheese
3/4 lb. cheddar cheese

Cut Jack cheese into strips, just enough to stuff into chilies. Lay stuffed chilies into an 8"x12" or 9"x13" Pyrex. Blend 3 eggs and evaporated milk. Pour over chilies. Grate remainder of Jack cheese and cheddar cheese. Sprinkle cheese over chilies. Cook in preheated oven at 350 degrees for 30 to 35 minutes. Enough for 4 people.
