CHILI STUFFED PEPPERS 
6 lg. green peppers
1/4 c. butter
3/4 c. onion, chopped
1 lb. ground beef
3/4 c. catsup
1 tsp. salt
1/2 tsp. pepper
2 tsp. chili powder
1/3 c. flour
1 c. evaporated milk
Parmesan cheese

Cut peppers in half, remove seeds, scald in boiling water (salted). Drain and set aside. Melt butter over low heat, add onion and cook gently until tender, about 5 minutes. Add beef, salt and pepper, chili powder. Cook over medium heat. Add flour, blend gradually. Stir in milk. Return to heat and cook until thickened, about 5 to 8 minutes. Stir in catsup and blend well. Arrange peppers in well greased pan. Fill with meat mixture and sprinkle with Parmesan cheese. Cover with foil and bake at 350 degrees for 30 minutes. Remove foil and bake for an additional 15 minutes.
