GREAT PRIME RIBS 
1 (7-10 lb.) rib roast
1 tbsp. salt
1 tsp. coarsely ground pepper
1 tsp. each onion and garlic powder
1 tsp. paprika
1 tsp. celery salt

Preheat oven to 450 degrees. Combine all seasoning. Rub seasoning lightly into meat; place roast into shallow roasting pan, just large enough to hold roast comfortably. Place into hot oven for 15 minutes, then lower heat to 325 degrees and continue cooking for 1 1/2 to 2 1/4 hours, excluding the first 15 minutes.

Cook 12 minutes per pound for rare, 14 minutes per pound for medium rare, and 20 minutes per pound for medium well done. At end of cooking time, remove roast and let set 15 minutes before carving. Yield: 10-12 servings.

I tried this recipe for Christmas eve dinner, we bought a 9 1/2lb. boneless prime rib roast and cooked it following the recipe. we cooked it with 1 cup of water and about 1 cup of beef broth for 2 hours with lid on roasting pan and for the first 15 minutes at 450°F then turning the oven to 325°F without opening the oven until the full cooking time was over, letting it rest for 15 minutes before slicing, everyone loved the roast and we had meat that ranged from medium rare to done,everyone was happy and for 10 people there was no roast left. Best recipe ever.
