1 (7-10 lb.) rib roast 1 tbsp. salt 1 tsp. coarsely ground pepper 1 tsp. each onion and garlic powder 1 tsp. paprika 1 tsp. celery salt Preheat oven to 450 degrees. Combine all seasoning. Rub seasoning lightly into meat; place roast into shallow roasting pan, just large enough to hold roast comfortably. Place into hot oven for 15 minutes, then lower heat to 325 degrees and continue cooking for 1 1/2 to 2 1/4 hours, excluding the first 15 minutes. Cook 12 minutes per pound for rare, 14 minutes per pound for medium rare, and 20 minutes per pound for medium well done. At end of cooking time, remove roast and let set 15 minutes before carving. Yield: 10-12 servings. |
