CHOCOLATE CHIPS WITH RICE FLOUR 
This is a variation of a fantastic recipe I found here on Cooks.com. I can't have peanut butter, which was an ingredient in the original recipe. I also doubled the original recipe.

WET INGREDIENTS:

6 cups oatmeal
4 jumbo eggs (or other eggs to measure 1 cup)
2 cups unsweetened applesauce
2 cups unflavored yogurt (or your favorite flavor)
1 cup honey or Karo corn syrup
2 tsp. vanilla

DRY INGREDIENTS:

2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon (optional)
1 1/2 cups rice flour

FLAVORINGS:

1 to 2 (12 oz. ea.) pkgs. chocolate chips.
1 cup cut-up dried apricots
1 cup raisins

Note: The dried fruit is better if left in water for a few hours (to plump) and draining before adding to cookie dough.

Put the oatmeal in a very large mixing bowl (such as one used for making large batches of bread). Add the other wet ingredients. Mix and let it soak while you prepare the rest.

Add the dry ingredients and mix. Add the flavorings and mix.

Use parchment paper on cookie sheets. Use about an eighth cup of dough, and batter will spread. These cookies can be placed close together, and they don't spread while cooking.

Bake at 350°F for 13 minutes.
