CURRIED CAULIFLOWER, POTATOES
AND BEANS
 
1 tbsp. olive oil
1 onion, chopped
2 garlic cloves, minced
1 tsp. ginger
1 to 2 tsp. curry
1/2 tsp. coriander
1 lb. red potatoes, cut
1 1/2 tsp. salt
1 head cauliflower
1 (15.5 oz.) can garbanzo beans
2 tbsp. chopped fresh cilantro

Cook/saut onion and garlic in olive oil. Add spices. Add 2 cups of water and potatoes. Bring to boiling. Turn to simmer and cook 10 minutes or until tender. Add cauliflower and beans. Cover and cook 15 minutes. Serve with cilantro.
