CAJUN FRIED RICE 
1 c. uncooked rice
3 med. onions, chopped coarse
1 stick butter
1 lb. pork chunks
1 tbsp. Louisiana seasoning
1 tbsp. garlic powder
1 tsp. black pepper
1 tsp. salt
6 green onions
Paprika
1/2 c. Open Pit Barbecue Sauce
1/4 c. soy sauce
1 tbsp. lemon juice

Combine barbecue sauce, soy sauce and lemon juice and marinate the pork in the mixture overnight. Cook rice according to package directions. While rice is cooking, saute onions in butter until clear. Add Louisiana Seasoning, garlic powder, salt and pepper. Add pork and marinate and cook until meat is cooked through. Simmer about 15 minutes. Add enough paprika to turn mixture reddish- brown. Add cooked rice and toss together. Add green onions.
