1/2 c. butter
1 1/4 c. sugar
2 eggs (or equivalent amount of egg whites)
1 tsp. baking soda
4 tbsp. sour cream
1 c. banana (ripe), mashed
1 1/2 c. cake flour (or regular flour)
1/4 tsp. salt
1 tsp. vanilla

Preheat oven to 350 degrees. Cream butter and sugar, add eggs, mix with beater. Add soda dissolved in sour cream. Beat well. Add remaining ingredients. Beat well until thick and creamy. Bake in well greased and floured 8" square or 9" tube pan for approximately 40 minutes until done. Serve frosted or unfrosted. Freezes well.
