VERY SPECIAL CARROT CAKE | |
2 c. sugar 1 1/4 c. vegetable oil 4 eggs 2 c. flour 1 tsp. cinnamon 1/2 tsp. nutmeg 1 tsp. salt 2 tsp. baking soda 3 c. grated carrots 1 c. pecans 1/2 c. raisins 1 c. crushed pineapple, drained Cream sugar and oil. Add eggs, one at a time. Add flour, spices, salt, and baking soda, mixing well. Add grated carrot, pecans, raisins and pineapple. Pour into a greased and floured 13x9 inch pan and bake in a 375 degree oven 50 to 60 minutes. Cool and frost with cheese icing. Serves 12. CHEESE ICING: 1 (8 oz.) pkg. cream cheese 1/2 c. butter 1 (1 lb.) box confectioners' sugar 1 tsp. vanilla Cream cheese and butter. Gradually add sugar, beating until fluffy and of spreading consistency. Stir in vanilla. |
