BROWNIE DROP COOKIES | |
1 c. butter 1 3/4 c. sugar 1 c. cottage cheese 2 eggs 1 tsp. vanilla 1/2 c. chopped pecans 2 1/2 c. flour 1/2 c. cocoa 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt Cream butter. Gradually add sugar and beat until light and fluffy. Add cottage cheese and beat thoroughly. Add eggs and beat well. Blend in vanilla. Sift together flour, cocoa, soda, baking powder and salt. Gradually add creamed mixture. Add pecans. Drop by rounded teaspoons onto greased baking sheet. Bake 12 to 14 minutes at 350 degrees. 5 dozen. CREAM CHEESE ICING: 1/2 stick (1/4 c.) melted butter 1 (3 oz.) pkg. softened cream cheese 3 c. unsifted powdered sugar 1 tsp. vanilla 1 tbsp. light cream or half and half VARIATIONS: (Instead of icing) 1. Add 12 ounces chocolate chips. 2. Make into ice cream sandwiches - put two together with a spoonful of ice cream in between. Freeze. 3. Roll in powdered sugar after baking. Instead of cocoa, use 3 ounces chocolate and 3 tablespoons butter. |
