ORANGE LOAF | |
1/2 c. butter 1 c. granulated sugar 2 eggs 1 orange rind 1/2 c. juice from orange (add orange juice if needed) 2 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/2 c. chopped walnuts (optional) Put butter, sugar and 1 egg into mixing bowl. Beat together. Beat in second egg. Stir in rind and juice. In another bowl put flour, baking powder, salt and nuts. Stir well and pour into mixing bowl. Stir until moistened. Turn into greased 9 x 5 x 3 inch loaf pan. Bake in 350 degree oven for 1 hour. Test with toothpick. Pour glaze over top. Let stand 10 minutes before removing loaf to cool on rack. Wrap to store. Makes 1 loaf. GLAZE: Juice from 1 orange 1/4 c. granulated sugar Combine orange juice with sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon over hot loaf. |
