WHOLE WHEAT ORANGE & CARROT LOAF 
1 1/4 c. whole wheat flour
1 tsp. ground cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs, slightly beaten
Grated peel & juice of 1 orange (1/3 c.)
1/3 c. honey
1/4 c. salad or vegetable oil
1 c. carrots, shredded
1/2 c. walnuts, chopped
1/2 c. raisins

In a large bowl, combine the flour, cinnamon, baking powder, baking soda, and salt. Combine the eggs, orange peel and juice, honey and oil; add to dry ingredients all at once. Stir quickly just until dry ingredients are moistened. Stir in carrots, walnuts, and raisins. Pour into well-greased 9 x 4 x 3 inch loaf pan. Bake at 350 degrees for 1 hour, or until a toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pan. Cool on a wire rack.
