APRICOT NUT BREAD 
1 c. boiling water
1 c. apricots
2 eggs
1 c. sugar
2 3/4 c. flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. nuts

Pour hot water over chopped apricots. Beat eggs until light; add sugar gradually. Sift together dry ingredients. Add apricot mixture and dry ingredients alternately to egg mixture; add nuts.

Bake in 2 (8 x 3 7/8 x 2 3/8 inches) bread pans greased with Pam 1 hour at 350 degrees.
