ZUCCHINI CASSEROLE 
3 lbs. zucchini, thinly sliced
1 red onion, finely chopped
2 tbsp. butter or olive oil
4 oz. can chopped green chilies
6 tbsp. whole wheat flour
1/4 c. chopped fresh parsley
1/2 tsp. salt
1/4 tsp. black pepper
3 c. grated Jack cheese
2 eggs, lightly beaten
2 c. cottage cheese
1 c. grated Parmesan cheese

Saute zucchini and onion in butter and place in large casserole dish. Cover with chilies, flour, parsley, salt, and pepper. Sprinkle Jack cheese on top. Mix eggs and cottage cheese in bowl and spoon evenly over top of casserole. Sprinkle with Parmesan cheese. Bake at 350 degrees for 35 minutes. Serves 8 to 10.
