ZUCCHINI BROWNIES 
2 c. diced zucchini OR 1 c. pureed zucchini
1/3 c. vegetable oil
2 c. flour
1 tsp. salt
1/2 c. cocoa
1 1/2 tsp. baking soda
1 1/4 c. sugar

Combine in blender or food processor, zucchini, oil and vanilla. Buzz until blended. Combine flour, soda, salt, sugar and cocoa. Add to zucchini mixture. Mix well. Bake in 9x13 pan at 350 degrees for 30 minutes. Frost when cool.

FROSTING:

5 tsp. cocoa
2 tsp. shortening
Dash salt
1/2 tsp. vanilla
2 tsp. butter
2 c. powdered sugar
1/4 c. milk

In saucepan, combine cocoa, butter and shortening. Melt over low heat, stirring often. Combine sugar, salt, milk and vanilla. Blend well. Add to cocoa mixture. Let stand. Spread over brownies.
