CHOCOLATE ZUCCHINI BROWNIES 
Bet your kids never know they are eating a vegetable!

3/4 cup vegetable oil
2 tsp. vanilla extract
4 cups zucchini, scrubbed and cubed with skin left on
2 cups all-purpose flour
1 1/2 cups white sugar
1 tsp. salt
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 cup unsweetened cocoa powder
1/2 cup chopped walnuts or chocolate chips (optional)

Preheat oven to 350°F.

Pour oil and vanilla into blender. Add in cubed zucchini and puree until smooth.

In a separate bowl sift together flour, sugar, salt, baking soda, baking powder and cocoa powder. Add the liquid mixture from blender. Mix well until smooth. Stir in walnuts or chips, if using. Pour into a greased 9x13-inch cake pan.

Bake at 350°F for 30 minutes or until center springs back to the touch.

Allow to cool completely. Cut into squares and sprinkle generously with confectioners' sugar.
