ZUCCHINI BROWNIES 
2 c. flour
1 tsp. salt
1 tsp. baking soda
1 1/4 c. sugar
1/2 c. cocoa
1 egg
2 tsp. vanilla
1/2 c. oil
2 c. zucchini, peeled, grated and drained
1/2 c. chopped nuts

Mix all dry ingredients. Add egg, vanilla and oil. Stir in zucchini and nuts. Bake in an 11 x 15 inch baking pan at 350 degrees for 20 minutes.

FROSTING:

2 c. powdered sugar
1/4 c. cocoa
1/4 c. butter
cold coffee

Mix powdered sugar, cocoa and butter with enough cold coffee to make icing desired spreading consistency. Spread on brownies and cut. Fr. Bowens justifies the eating of these by rationalizing the zucchini is healthy for you!
