BEEF WITH MUSTARD CRUST 
1/2 c. bread crumbs
2 tbsp. chopped parsley
1/4 tsp. salt
1/4 tsp. pepper
3 lb. eye of roast beef
2 tbsp. Dijon mustard

Heat oven to 325 degrees. Combine the bread crumbs, parsley, salt and pepper. Coat top and sides of the roast with mustard and roll in crumb mixture. Put the meat in a roasting pan and bake for 1 hour (medium rare) or until desired taste. Makes 12 servings.
