BEEF AND NOODLE CASSEROLE 
2 lbs. stir fry beef pieces
1 lg. pack dry noodles
1 jar stemmed mushrooms
1 pack frozen peas & carrots
1 can cream of celery soup
1 c. sour cream
2 cans beef broth
Salt & pepper to taste
Garlic (opt.)

Brown beef pieces in small amount of fat until well browned. Add 2 cans of beef broth and 1 can of water and bring to a rapid boil. Add noodles and cook for 6 to 8 minutes. Add rest of ingredients. Add salt and pepper to taste. Garlic may be added now if desired. Pour into a large 4 quart casserole dish and bake at 350 degrees for 1 to 1 1/2 hours or until thickened.
