WILD RICE CASSEROLE | |
1 (6 3/4 oz.) box minute long grain & wild rice 2 tbsp. butter 1 tbsp. flour 1 c. milk 1/2 c. grated cheddar cheese 2 tbsp. chablis wine or 2 tsp. lemon juice 2 c. diced, cooked chicken, turkey or shrimp Prepare rice according to directions on box. Spoon into lightly greased 1 1/2 quart casserole dish. Meanwhile, melt butter and blend in flour. Gradually add milk and stir over low heat until thickened. Add cheese and wine, stir until cheese is melted. Add chicken and sauce to rice in casserole and mix well. Bake at 350 degrees for 20 minutes until hot and bubbly. Serves 4 to 6. |
