TEXAS STRAW HATS 
1 c. chopped onion
2/3 c. chopped green pepper
2/3 c. chopped celery
3 tbsp. fat (bacon grease is best)
2 lb. ground beef
2 to 3 tsp. chili powder
2 tsp. salt
1/2 tsp. thyme
1/4 tsp. pepper
2 cans tomato paste (6 oz.)
1/2 c. catsup
2 c. water
2 tsp. Worcestershire sauce
Dash Tabasco sauce
Corn chips
American cheese (sharp)

In a large skillet, cook the onion, celery, and green pepper in hot fat until tender but not brown. Add the beef and brown lightly. add the remaining ingredients except the chips and cheese. Simmer uncovered for 1 hour. Serve on corn chips; top generously with shredded cheese. Makes 6 to 7 servings.
