GRANNIE'S APPLE CAKE 
2 eggs
1 c. oil
2 c. sugar
2 c. flour
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
4 c. thinly sliced green apples
1 c. chopped walnuts

Preheat oven to 350 degrees. Grease a 9x13 inch glass Pyrex dish. Mix eggs with oil, add sugar. Combine well and add 2 cups flour, 1 tsp. vanilla, 1 tsp. baking soda and 1/2 tsp. salt. Fold in apples and nuts by hand. Spread into prepared pan and bake for 45 minutes. Meanwhile, beat ingredients for frosting (Cream Cheese Frosting). Frost cake when cool. Serves 12.

CREAM CHEESE FROSTING:

6 oz. cream cheese, softened
3 tbsp. melted butter
1 1/2 c. powdered sugar
1 tsp. vanilla
