SHRIMP SCAMPI 
1 c. butter
1/4 c. olive oil
1 tbsp. chopped parsley
1/2 tsp. dried basil
1/2 tsp. dried oregano
2-3 garlic cloves, minced
3/4 tsp. salt
1 tbsp. lemon juice
1 lb. med. fresh shrimp

1. Melt the butter and add the olive oil, parsley, basil, oregano, garlic, salt and lemon juice. Mix well and set aside.

2. Peel and devein the shrimp, leaving the tails attached. Split down the inside lengthwise, being careful not to cut through the shrimp. Spread open to simulate butterflies.

3. Place in a single layer in a shallow baking pan, tail end up. Pour sauce over all. Bake at 450 degrees for 3 minutes. Place under broiler for 3 minutes longer. Be careful not to overcook.

4. Serve over rice or linguini.
