1 1/4 lbs. blanched whole almonds 1/4 c. sugar plus additional for coating the dough 2 lg. egg whites, beaten lightly 1/2 c. fine quality lemon marmalade Grind almonds, add sugar, stir in egg whites and marmalade, stirring until combined well. Roll rounded teaspoons of dough into balls. Coat balls with sugar. Flatten balls slightly and arrange the cookies 1 1/2" apart on greased and lightly floured baking sheets. Bake at 325 degrees for 18 to 20 minutes. Makes about 45 cookies. |
