COCONUT PINEAPPLE CAKE 
2 c. all purpose flour
1 3/4 c. sugar
1/2 tsp. baking soda & salt
2 1/2 c. crushed pineapple with juice
2 eggs, beaten
1 tsp. vanilla
1/2 c. brown sugar
1/2 c. coconut

Preheat oven to 350 degrees. Mix everything except brown sugar and coconut in order listed. Pour into greased 13"x9"x2" pan. Combine brown sugar and coconut. Sprinkle on top of cake and bake until done, 40 to 50 minutes. There is no shortening, except in icing.

ICING:

1 stick butter
3/4 c. sugar
1/4 c. evaporated milk

Boil 2 minutes, no longer. Add 1/2 cup pecans and 1/2 cup coconut. Spread on cooled cake.
