JIFFY REUBEN CASSEROLE | |
1 lb. sauerkraut 1/4 c. parsley 1/4 c. onion 1 tbsp. celery or caraway seed 2 c. shredded Swiss cheese 1/2 c. Thousand Island dressing 4 tbsp. mayonnaise 3 slices rye bread, cut into 1/2 inch cubes 1/2 lb. thinly sliced cooked, corned beef 1/4 c. melted butter Combine first 4 ingredients; toss to mix well in 8x8 inch baking dish. Top with 1 cup cheese and 1/4 cup dressing and 2 tablespoons mayonnaise; spread evenly. Add corned beef, rest of cheese and the rest of dressing and mayonnaise. Toss bread cubes with melted butter and sprinkle all over. Bake for 35-40 minutes at 375 degrees. |
