APPLE WALNUT MUFFINS 
2 c. all-purpose flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
3/4 c. milk
1/4 c. butter, melted
1 1/2 c. coarsely grated apple

TOPPING:

1/2 c. chopped walnuts
1/4 c. sugar
1/2 tsp. cinnamon

Preheat oven to 375 degrees. Prepare 16 muffin pan cups. Combine flour, sugar, baking powder, cinnamon and salt in bowl and mix. Whisk milk, eggs, and butter in bowl until blended. Pour over flour mixture, stir just enough to blend. Stir in grated apples. Spoon batter into muffin cups; fill 2/3 full. Combine remaining walnuts, sugar, cinnamon. Sprinkle over each muffin. Bake at 375 degrees for 15 minutes.
