WALNUT APPLE MUFFINS | |
1 1/4 c. milk 2 1/2 tsp. salt 1/4 c. honey 1/2 c. warm water 1/2 c. finely chopped apple 1/4 c. brown sugar 1/4 c. butter 2 pkg. yeast 2 c. whole wheat flour 1/2 c. chopped walnuts In a saucepan heat milk, brown sugar, salt, butter and honey until warm. In large bowl dissolve yeast in warm water and add milk mixture. Stir in wheat flour and beat at medium speed until smooth. By hand, stir in enough white flour to make a very thick batter, mixing well. Cover loosely and let rise until double in bulk, about 45 minutes. Stir batter down and mix in apples and nuts. Spoon batter into well greased muffin pans; filling each about 1/2 full. Cover and let rise about 30 minutes. Bake at 400 degrees for 20-25 minutes. Cool on rack. Makes about 18 muffins. |
