APPLE WALNUT MUFFINS 
2 c. unsifted flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
3/4 c. milk
2 eggs
1/4 c. melted butter
1 1/2 c. coarsely grated apple
1/2 c. chopped walnuts
1/4 c. sugar
1/2 tsp. cinnamon

Heat oven to 375 degrees. Grease bottoms of muffin pan cups. Combine flour, 1/2 cup sugar, baking powder, cinnamon and salt. Whisk milk, eggs and butter in bowl until blended. Pour over flour mixture and stir just until moistened. Fold in grated apple. Fill muffin cups 2/3 full.

Combine walnuts, 1/4 cup sugar and cinnamon. Sprinkle over batter. Bake for 15 minutes. Cool in pan 5 minutes. Take out of pans.
