THAI TUNA SANDWICHES | |
1 can (6 1/2 oz.) albacore, drained 2 green onions, ends trimmed, chopped including tops 1 1/2 tbsp. lemon juice 3 tbsp. mayonnaise 1/4 c. chopped fresh cilantro Small red onions 2 tbsp. chopped fresh mint leaves 1/4-1/2 tsp. cayenne 4 slices thin-sliced toasted bread 4-6 tbsp. chunk-style peanut butter (I prefer smooth old-fashioned spread thin) Fresh cilantro sprigs In a bowl mix tuna, onion, lemon juice, mayonnaise, cilantro, mint and cayenne. Spread each toasted bread slicer with peanut butter, then equally spoon tuna mixture on top (I prefer to use more of the mixture). Garnish with cilantro sprigs. Trim crust and cross-cut for appetizers. |
