TUNA LOAF SANDWICHES 
1 (9 1/4 oz.) can tuna, drained
1/2 c. cracker crumbs
2 eggs, slightly beaten
1 tbsp. finely chopped green onion
1 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. lemon pepper
1/4 tsp. chili powder
Dash of red pepper sauce
lettuce leaves
4 hamburger buns, split and toasted
Tartar Sauce (below)
2 tomatoes, sliced

Mix tuna, cracker crumbs, eggs, onion, lemon juice, salt, lemon pepper, chili powder, and pepper sauce. Press in greased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches. Cook, uncovered, in 350 degree oven until firm and juicy, about 25 minutes. Cool in pan about 2 minutes; remove from pan.

Cut loaf into fourths; split each fourth horizontally into halves. Place lettuce and 1 tuna slice on each bun half; spread with about 1 tablespoon Tartar Sauce and top with tomato slice. 4 servings. (2 open-face sandwiches per serving).

TARTAR SAUCE:

1/2 c. mayonnaise or salad dressing
1 tbsp. finely chopped dill pickle
1 1/2 tsp. snipped parsley
1 tsp. chopped pimento
1/2 tsp. grated onion

Mix all ingredients; refrigerate until serving.
