1 stick butter 1 1/2 c. brown sugar 4 eggs 3 c. flour 1 tbsp. baking soda 1 tsp. each cinnamon, nutmeg, cloves, allspice 3/4 c. apple juice 3 tbsp. sweet milk 2 boxes raisins, 1 light, 1 dark 3 lbs. fruit (cherries, pineapple, etc.) 6 c. pecans Cream butter and sugar. Add eggs. Add dry ingredients alternately with juice and milk. Cut fruit and nuts in large pieces. Use a little extra flour to flour fruit and nuts. Add to mixture. Drop by teaspoon on cookie sheets. Bake at 350 degrees for 10 minutes. Yield: 200 to 250 cookies. NOTE: Keeps fresh in air tight tins with a slice or two of apple. These Christmas cookies have been a 30 year tradition in my family! |
