CHICKEN WAIKIKI BEACH 
1 chicken, cut up, coat in seasoned flour and brown on both sides

SAUCE:

1 can (15 oz.) pineapple chunks
1 c. sugar
2 tbsp. cornstarch
3/4 c. cider vinegar
1 tbsp. soy sauce
1/4 tsp. ginger
1 chicken bouillon cube
1 green pepper, sliced

Drain pineapple and reserve juice, add water to make 1 1/4 cups. Dissolve cornstarch in this, add (in saucepan) vinegar, sugar, soy sauce, ginger and chicken cubes. Boil 2 minutes. Put chicken in glass 9 x 13 baking dish and pour sauce over. Bake 30 minutes uncovered at 350 degrees. Add pineapple and green pepper and bake another 30 minutes.
