OVEN FRIED CHICKEN 
1 c. flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/2 c. shortening (half butter)
1 cut up chicken or pieces

Heat oven to 425 degrees. Mix flour, salt, pepper and paprika in paper bag. Put shortening in 13" x 9 1/2" x 2" pan. Set in oven to melt.

Shake 3 or 4 pieces of chicken at a time to coat thoroughly. Place chicken skin side down, in single layer in hot shortening. Bake 30 minutes, turn skin side up and bake another 30 minutes or until tender.

To cut down on fat I skin the chicken, coat in either buttermilk, egg white or egg substitute. Then dredge in flour mixture. You also have to lower oven temperature and watch closely.
