EASY OVEN FRIED FISH 
1 lb. fresh or frozen sole or flounder fillets
1 slightly beaten egg white
3 tbsp. frozen grapefruit or orange juice concentrate, thawed
1 tbsp. Worcestershire sauce
1/2 c. crushed rich round crackers, about 12
1/4 c. toasted wheat germ
1 tbsp. butter, melted

Thaw fish, if frozen. Separate the fillets; pat dry with toweling. Combine beaten egg white, grapefruit or orange juice concentrate and Worcestershire sauce. Combine the crushed crackers and wheat germ. Dip fish fillets in egg mixture, then in crumb mixture. Arrange in 13"x9"x2" baking dish. Drizzle melted butter evenly over fish. Bake in 500 degree oven for 8 to 10 minutes. 4 servings.
