BLUEBERRY COBBLER 
2 tbsp. butter
1 c. flour
1/2 c. milk
2 tsp. baking powder
1/2 c. sugar
1/2 tsp. salt
2 c. blueberries
2 c. sugar, separated
1 c. boiling water

Mix all, except blueberries and 2nd cup sugar. Spread over bottom of well buttered pan. Add blueberries and a 2nd cup of sugar. Pour boiling water over blueberries and sugar layer. Dot with extra butter.

Bake at 315°F for 35 to 45 minutes.

A friend gave me this recipe years ago and I made it so many times I thought I had it memorized. I lost the recipe and could mostly only remember the boiling water and sugar, plus the flour, sugar, milk and butter, etc., but not in the right amounts. This recipe is so good and so easy and any fruit can be used. By sprinkling the extra sugar on top and then adding the boiling water, the batter will rise around the berries and form an awesome sweet syrup on the bottom. Sometimes I don't use as an entire cup of sugar as it is really sweet. Delicious served with ice cream. Also good the next morning with coffee.
