ZUCCHINI "APPLESAUCE" | |
2 medium zucchini, peeled and diced 2 cooking apples, peeled, cored and diced 1/2 cup water 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 cup sugar 2 whole cloves 1 tbsp. lemon juice (optional) In a large saucepan; bring to a boil zucchini, apple, water, sugar, cloves and salt. Reduce heat, cover and then cook 20 minutes, stirring occasionally. Remove cover; continue cooking until all liquid has evaporated. Discard cloves. Mash mixture or blend in partially covered blender container until smooth. Stir in lemon juice and cinnamon. Cover and refrigerate. Makes about 2 cups. |
