MY MOTHER-IN-LAW'S BORSCHT 
3 or 4 med. fresh beets
1 lb. flanken
Marrow bones, several
1 onion, cubed
1 med. can tomatoes
Sour salt
Sugar
Pepper, salt

Peel beets and cut in rounds. Cut up meat. Add hot water to beets, meat and bones in pot. Add onion, salt and pepper, a couple of pieces of sour salt. Bring to boil. Turn to simmer. Spoon off scum as it simmers.

After 1/2 hour, add sugar to taste. Cook 1 1/2 hours. Heat tomatoes, run through strainer. Add juice. When meat is tender, remove bones and cut up meat. Add a couple of potatoes, cubed, and cook until tender. Add sour salt and sugar to taste.
