YANKEE POT ROAST 
Preparation time: 2 hours.

3 lbs. beef pot roast
1 tbsp. fat
1/2 c. water
2 lbs. sm. new potatoes
2 lbs. sm. onions

Brown meat in melted fat in pressure cooker. Add water and cook at 15 pounds pressure for 1 hour and 15 minutes. Cool quickly. Add vegetables and cook at 15 pounds pressure 10 minutes longer. Cool quickly. Serves 6. 385 cal. per serving. Source of vitamin B.
