PEPPER STEAK 
1 lb. round steak
1/4 c. oil
1 tsp. salt
1/4 tsp. ginger
1 1/4 c. water
1/4 c. soy sauce
1/2 c. celery, cut crosswise
1 c. onion, chopped
1 c. green pepper, chopped
1/4 tbsp. cornstarch
2 ripe tomatoes

Cut steaks in strips and brown in oil. Add seasonings, water and simmer for 45 minutes. Add pepper, celery and onions. Cook only so the vegetables are still crisp; add tomatoes. Mix cornstarch with water and cook until thickened. Serve over rice.

Canned tomatoes may be used instead of fresh. 6 servings.
